Pallotte cace e ove is listed among Abruzzo’s registered gastronomic preparations, a compact name that already points to cheese and eggs. It is not a museum piece on the page so much as a reason to sit down: a fried centre given a tomato finish, the kind of plate that makes a table feel settled without needing a long story attached.
The balls themselves are built from grated cheeses, eggs and bread, then fried until the outside takes colour. After that they rest in a light tomato sauce, sharp enough to cut the richness of dairy and crumb, gentle enough not to drown the crust. What you get is contrast in one spoonful: hot, savoury interior, a thin red glaze, and the small satisfaction of something mixed by hand and finished in the pan.
