In the Avellino hinterland, around Montella, Bagnoli Irpino and Nusco, a fresh pasta filata cheese is still given a very particular silhouette: three cords, worked by hand and then plaited. That braid is not a garnish. It is the cheese itself, a compact, inviting form that already hints at how it was pulled and folded. Campania’s regional notes also record a characteristic smell, slightly acid and clearly of milk, the first quiet signal that this is a dairy piece meant to be met close to the vat rather than after long ageing.
The path toward that braid begins with milk brought to thirty-six or thirty-seven degrees. Into the liquid goes calf rennet, and coagulation is expected within twenty to thirty minutes. Nothing in those few facts is theatrical, yet the timing is tight enough to keep a maker’s attention on the vat: heat just so, enzyme in, then the wait while the mass sets. From that brief window the later stretch and the three-cord shape become possible, because the curd must be ready to be handled while it still answers to the spinner’s hands.
What follows is a characteristic spinning, and it is not the same gesture used for buffalo mozzarella. Here the lift is rotary, a turning raise rather than that other, more familiar pull. Once the mass has been spun, it is worked into cords and then braided by hand. Cooling in water comes next, setting the plait so the three strands hold their architecture. Watching those cords lock together is the moment the cheese stops being anonymous pasta filata and becomes Treccia di Montella in the strict sense of its documented shape.
Salt is seldom mixed straight into the paste. Salting is usually done in brine. Spinning itself may even wait until after that stage; if it does, ripening slows, sometimes by as much as a day. Those choices keep the braid edible as a fresh cheese while still giving the maker a little room to organise the work. Curiosity lingers at the table: how the slightly acid milk scent meets the three-strand form, and how a rotary lift, a water bath and a brine bath together decide what you taste when you finally tear a cord free.
