Soppressata del Cilento* is a cured pork sausage from Campania whose appeal sits in what stays out of the mix as much as what goes in. Regione Campania describes a filling without added sugar, milk, colouring powders, starch, flavour additives, starter preservatives or antioxidants, and without sweet or hot chilli. At sale it reads as a slightly flattened cylinder, pressed along its height rather than left perfectly round.
The story of the piece is the work of the hands. Raw material is chosen by eye; the white fat comes from the neck between the shoulders. Mixing may be done in a machine or by hand, then the paste is packed into the last stretch of intestine, either by hand or with a stuffer. The filled casing is pierced and bound with hemp twine so moisture can leave evenly while the sausage firms.
Width sits between five and nine centimetres. As it ages the outside moves from red toward brown. Inside, the texture is compact, the lard stays white, and the slice should show no splits. That spare profile is the useful cue: look for a modest, hemp-tied cylinder whose fat is clean and whose seasoning does not lean on chilli or sugar.
